Greek Inspired Whole Wheat Couscous Salad

Ingredients

-1 cup Zinda Whole Wheat Pearl Couscous

- 2.5 cups vegetable broth

- 2 chopped tomatoes

- 2 chopped green onions

- 1/2 seeded, diced cucumber

- 1/2 cup crumbled feta cheese

- 1 teaspoon minced garlic

- 4 tablespoons olive oil

- 2 tablespoons lemon juice

- 1 tablespoon chopped parsley

- 1/2 teaspoon dry oregano

- 1/2 teaspoon ground cumin

Preperation

1. In a pot, bring the vegetable broth to a boil. 

2. Stir in the pearl couscous and let cook for 10-12 minute.

3. Allow couscous to cool. 

4. In a large bowl, mix couscous with all other ingredients.

5. Season and Serve.
